Jazbey jo dil se ubhar kar harfoon main dhaltey hain
To mohabbat ki zubaan ban jatey hain
Lekin kabhi kabhi yehi jazbey
Zest ki meheeb dewaroon se takra kar khudhi
Apni hi rouh k atishkadey main jal uthtey hain
Aur phir waqt ka marham ahista ahista
in zakhmoon ko mandeel kar deta hay
Lekin dag phir bhi rah jatey hain
Shayad isliye k mohabbat lafani hay
Aur jazbey dagoon ki surat main apni
Kabhi na mitney wali nishani choor jatey hain

IngredientsFor the mutton curry marinade
1kg/2lb 2oz mutton leg, bone removed,
meat cut into 2.5cm/1in cubes
150ml/5fl oz plain yoghurt
3 garlic cloves, crushed
3cm/1¼in piece fresh root ginger,
peeled, finely grated
1 lemon, juice only
1 tsp garam masala
1 tsp chilli powder
½ tsp ground coriander
½ tsp ground cumin
½ tsp ground turmeric
½ tsp salt
For the mutton curry sauce1 tsp cumin seeds
1 tsp coriander seeds
¼ tsp fenugreek seeds
1 cinnamon stick
6 cloves
50g/2oz ghee
2.5cm/1in piece fresh root ginger,
peeled, finely grated
2 garlic cloves, crushed
300g/10½oz tomato purée
150ml/5fl oz double cream
75g/3oz ground almonds
salt and freshly ground pepper
For the puri
300g/10½oz wholewheat flour,
 plus extra for dusting
pinch salt
110ml/4fl oz water
vegetable oil, for deep frying
To serve
2 birds'-eye chillies, finely sliced
2 tbsp fresh coriander leaves
Preparation method1.For the mutton curry marinade, place the mutton into a large bowl,
add all the mutton curry marinade ingredients and mix well.
2.Place in the fridge to marinate for at least 3 hours,
or preferably overnight.
3.For the mutton curry sauce, when the mutton has marinated,
heat a large wok over a high heat, add the cumin, coriander,
fenugreek, cinnamon and cloves and stir-fry for 10-20 seconds,
or until fragrant and just toasted.
4.Tip the toasted spices into a pestle and mortar
and grind to a fine powder. Set aside.
5.Add half of the ghee to the wok. When it has melted,
add the marinated mutton, in batches, and fry for 1-2 minutes
on all sides, or until slightly charred on all sides.
Remove from the wok and set aside.
Repeat the process with the remaining mutton.
6.Add the remaining ghee to the wok, then add the ginger
and garlic and fry for 30 seconds.
7.Add the ground spices and tomato purée
and cook for a further 1-2 minutes.
8.Reduce the heat slightly, add the double cream
and bring the mixture to a simmer, stirring well.
9.Reduce the heat to very low, return the mutton to the pan
and cook the curry gently for 1½ hours, or until the meat is tender.
10.Just before serving, add the ground almonds.
Stir well and cook for a further minute. Season, to taste,
with salt and freshly ground pepper.
11.For the puri, place the flour into a bowl with a pinch of salt.
Make a well in the centre.
12.Gradually add the water, drawing more flour into the well as you go,
until the mixture comes together as a firm dough.
(You may not need to add all of the water.)
13.Turn out the dough onto a lightly floured work surface.
Knead for 1-2 minutes, then wrap in cling film and chill in the fridge
for 30 minutes.
14.When the dough has chilled, divide it into 4-8 golf-ball sized portions.
Roll each out into 2mm thick flat discs.
15.Heat the vegetable oil in a wok until a breadcrumb sizzles and turns golden-brown when dropped into it. Alternatively, heat the oil in a deep-fat fryer to 190C/375F.
16.Carefully lower the puri into the hot oil one at a time.
Fry for 30-45 seconds on each side, or until light golden-brown
and puffed up. Remove from the pan using a slotted spoon
and set aside to drain on kitchen paper.
17.To serve, ladle the butter mutton curry onto serving plates.
Sprinkle over some of the green chillies, fenugreek leaves
and coriander leaves. Pile 1-2 puri alongside each serving.

Quranic Wisdom

11. O you who believe! let not (one) people laugh at (another) people perchance they may be better than they, nor let women (laugh) at (other) women, perchance they may be better than they; and do not find fault with your own people nor call one another by nicknames; evil is a bad name after faith, and whoever does not turn, these it is that are the unjust.

12. O you who believe! avoid most of suspicion, for surely suspicion in some cases is a sin, and do not spy nor let some of you backbite others. Does one of you like to eat the flesh of his dead brother? But you abhor it; and be careful of (your duty to) Allah, surely Allah is Oft-returning (to mercy), Merciful.

13. O you men! surely We have created you of a male and a female, and made you tribes and families that you may know each other; surely the most honorable of you with Allah is the one among you most careful (of his duty); surely Allah is Knowing, Aware.

Smoking increases risk of developing active tuberculosis

You're twice as likely to fall ill, research finds
It is well known that smoking kills you slowly, but new research has found that it can also
kill you quickly, by doubling your chances of catching active tuberculosis.
Tuberculosis is an infection caused by a germ, spread through the air,
that usually affects the lungs.
About one in ten of those infected with the germ gets active tuberculosis.
If left untreated, active tuberculosis kills more than half of those infected.
A new study on the incidence of tuberculosis in Taiwan compared the likelihood of
developing active tuberculosis among former and current smokers and non-smokers.
It found that those who had smoked in the past had 2.69 times the risk of developing
active tuberculosis compared to those that had never smoked, while current smokers
had 2.73 times the risk.
"In this prospective cohort study we found a two-fold increase in the risk of active TB
in current smokers compared with never-smokers," said the lead author, Hsien-Ho Lin,
research fellow at Brigham and Women's Hospital in Boston.
The study also found that younger smokers were more likely than smokers older than
65 to develop active tuberculosis when compared to those who had never smoked.
"To our knowledge this is the first cohort study from a general population that
provides evidence on the positive association between tobacco smoking and active TB.
Based on results from ours and other studies, policy makers and public health personnel
should consider addressing tobacco cessation as part of tuberculosis control.

From the perspective of prevention, the target of smoking cessation should aim beyond
TB patients to reach high-risk populations who are most likely to benefit from cessation,"
said Dr. Lin.
The results are reported in the September 1st issue of the American Journal of Respiratory
 and Critical Care Medicine.

Going With the Flow

"There's a story about a group of Chinese men walking through the woods beside a rushing river.
Suddenly, they spotted the body of an old man bobbing up and down in the roaring rapids.
"Thinking the old man was dead, they ran to the river's edge trying to figure out how they were going to
fish the body out of the water so that it wouldn't be swept out to sea.
Their discussion came to an abrupt halt when the old man, who they had thought
was dead emerged out of the water, dried himself off and started walking away.
The men ran after the old man and asked, 'How did you survive in that water?
No one could swim in that water without being killed.'
"'It is really easy' the old man replied.
'I just went up when the water went up, and down when the water went down.'"
~Carnelian Sage~

We always have a choice in how we will meet life's more difficult moments.
We can either resist and fight what is happening, thereby risking getting sucked in by the turmoil
and drowned in our own misery, or we can ride the current, bobbing along with each wave until
we are carried aloft through the rapids and into the peaceful and quiet stream at its end.
That, after Allis what going with the flow really means.
May you always be willing to ride life's current.
And may you always be aware that you are loved beyond measure and a cherished blessing to me!.

Value in the Giving

There have been times
When the kindness of another person
Has changed your life for the better.
And it's easy to see that kindness
Has the power to reach far beyond itself.

In the most difficult of momentskindness heals
and reassures.
Kindness gives comfort and hope
Where there was none before.
Kindness can inspire confidence
.
It changes for the better
The perspective of those it touches.

When you seek to make a differencekindness is
a great place to start.
Just the simple desire to give it
Is all you really must have.

So give kindnessfreely
And without hesitation.
Whether you get it back
Does not really even matterfor its true value is in the giving.

Live with kindnessand you'll always see life's
Very best possibilities.
For in kindnessis the heart of who you truly are.
~Ralph Marston~
