Chicken Shish Kabobs

 

{serves 4}



-2 chicken breasts {about 8 ounces each}
-1 small zucchini
-1 small yellow Italian squash
{they look like yellow zucchinis}-1 cup of sweet grape tomatoes
-1 large onion, cut into  large chunks
-1 bell pepper {any color}
-1/4 cup balsamic vinegar
-1 teaspoon of dry oregano
-2 tablespoons of honey
-a few teaspoons of grill seasoning
-2 tablespoons of dijon mustard
-2 tablespoons of olive oil

1. Cut the chicken and veg {I left the tomatoes whole} into bite sized pieces.
Put the chicken in one bowl and the veggies in another bowl. 
2. In a small measuring cup, mix together the marinade ingredients
{balsamic vinegar through olive oil}.3. Pour a little marinade over the veggies and the rest over the chicken.
Toss so that all items are covered in the marinade and cover bowls with plastic wrap.
Allow them to sit in the refrigerator for about an hour before grilling.
4. Remove chicken and veggies from the refrigerator and put onto skewers.
I used two skewers per serving.
5. Grill for about 8 minutes per side over medium heat.
Serve with rice or tasty whole grain blend.
